Chickens, for example - and particularly roosters - primarily symbolized vigilance, religious communication, and the dawn of a new faith. So it's no wonder you could see medieval rooster drawings having them act in accordance with that. You know there's a reason why you see so many chickens lying on random things that are not eggs, right? It's all in their brain - chickens have an extremely strong maternal instinct, which is called “broodiness”. It's an urge to establish a safe nest, or simple nesting preparation.
